De Buyer's 'Mineral B' paella pans are formed into the traditional form designed to create a wide, flat base to brown and crisp the bottom of paella. This also makes it able to double as a braiser as the heavy bottom is perfect for searing meats providing a deep brown crust.
Mineral B is a heavy gauge carbon steel with a protective beeswax finish to preserve the pan until it can be seasoned.
When properly seasoned carbon steel pans have a natural non-stick surface.
Do not use detergents or put in the dishwasher.
